Rainforest Retreat Looking for Bar & Restaurant Manager at Franz Josef Glacier, West Coast Full Time

We are looking for an experienced Bar & Restaurant Manager to take an active management role to lead our awesome team in the heart of Glacier Country. 

The Monsoon is the onsite bar & restaurant for the Rainforest Retreat, serving home cooked meals and tasty beverages daily from 4:30pm till late. The venue also plays host to a variety of functions – whether it be weddings, Wellness Retreats, or late-night DJ’s – and so the ideal candidate would be highly adaptable and enjoy a broad selection of clientele.

A passion for food and beverage is an absolute must plus having an excellent product knowledge to have a creative input into seasonal menu changes and drinks specials. We are looking for someone that is familiar with ordering, stock control, back-office POS systems, and can work with reps to source quality products and competitive pricing.

Customer service is our top priority, and so being personable and having an accommodating nature is essential. We are also looking for someone who has confidence in their leadership abilities, using positive encouragement and great communication to get the best results from their team.

The detailed Job Description:

• Ensure all bar and wait staff are trained correctly, performing and understanding their jobs as set out in their individual job descriptions
• Ensure all staff are aware of their obligations pursuant to the Sale and Supply of Alcohol Act 2012 and the company’s liquor licence is not jeopardised—this includes patron conduct and intoxication, checking for underage patrons and staff behaviour behind the bar including the enforcement of no drinking at work. Use staff meetings and training to reiterate the act and associated laws
• Manage staff in a fair and equitable manner, take appropriate disciplinary action when required and comply with best practice and establishment regulations. 
• Aim to achieve the highest possible customer survey results and look for opportunities to increase business by encouraging guest’s recommendations through word of mouth and online reviews
• Ensure staff have access to all manuals and forms they may need and keep all manuals up to date.
• Ensure an effective table reservation system is in operation
• Ensure bar and wait staff can confidently describe wine list and menu items, and can make recommendations when asked to do so
• Ensure staff are aware of specials, new wine lists and menu items and out of stock food and wine
• Maintain a high level of morale and team cooperation 
• Follow up on customer complaints/comments quickly
• Ensure staff, food and beverages are organised for group bookings
• Ensure the housekeepers are carrying out their duties to the required standard in respect to the bar clean and let them know if there is anything extra that needs to be done, or if anything is not being done to the agreed standard.
• Use “Trello” the company’s online communication portal to manage your day to day activities
• Ensure an adequate supply of all items needed by the bar & restaurant, including napkins, cutlery, glassware, docket books, menus, wine lists, printer and eftpos paper, staff uniforms, etc.
• Assist the cooks to ensure the restaurant equipment is maintained to reduce the likelihood of breakdowns
• Ensure the prompt and efficient service of all meals, snacks, and beverages 
• Ensure that staff are always correctly and smartly dressed, they offer professional and courteous service to their customers, and they comply with the required standards.  Uniforms will be provided
• Act as Duty Manager as required and assist staff with their jobs when needed
• Ensure company and statutory hygiene standards are maintained in all areas
• Take the necessary steps in the event of theft, burglary, fire or natural disaster  
• Hold regular performance appraisals with all management staff, identifying areas for development and training needs, and ensure this training is effected.  Performance appraisals shall be carried out in accordance the individual contract agreements.
• Host regular staff meetings to communicate with staff any issues, praise, and developments. Be available to receive feedback and ideas from staff
• Be fully aware of trends in the industry and make suggestions for improvement of the beverage options and catering operation
• Ensure the office is kept in a tidy state
• Take responsibility for the stock control and purchasing, ensuring all stock is accounted for, integrity is maintained in the stock control system, weekly stock takes are completed, variances are reported to the Director and General Manager and remedial action is taken.
• Ensure all deliveries are checked off and invoices, credit & delivery notes are entered correctly and uploaded to the accounting system
• Ensure the gross profits of food and beverages are not to fall below the specified targets as set by the director.  Run quarterly reports to compare costs and adjust as necessary to maintain targets
• Ensure the targets for the Cost of Goods set by the director are maintained
• Liaise with food and beverage rep’s for POS and promo material
• Ensure bar rostered hours and budgets are adhered to and budgeted hours are improved on where possible.
• Look for opportunities to increase revenue for the business
• Ensure the bar areas and behind the bars are kept clean and tidy at all times and discipline is maintained.
• Set the correct mood and atmosphere for the bar depending on time of day and clientele through an appropriate selection of music, volumes, lighting and furniture layouts.
• Ensure all equipment is kept clean and tidy and in good working order, this includes beer taps, fridges, chiller room equipment, tills and computers and sound systems.
• Ensure till systems are correctly programmed and working correctly
• Prepare and introduce an on-going calendar of cost-effective promotional initiatives 
• Ensure all funds and proceeds belonging to the business are accounted for, secured and locked in the safe before leaving the premises
• Ensure the premises is a safe environment for all patrons and staff, and that compliance with Health & Safety requirements are adhered to.  Ensure any incidents are reported to senior management. 
• Maintain and complete the premises incident record book
• Participate as a constructive member of the management team with the view to maximising business sales volumes and profitability 
• Carry out other general duties as the General Manager may require from time to time
• Lead from the top

If you have a General Managers certificate that has expired the company will happily cover the cost of the renewal.

You will be offered a minimum of 35 hours and a maximum of 45.  In peak periods there will be occasions for additional hours all pending the needs of the business.
