Job Summary
Michigan Dining comprises twenty-one on-campus cafes and markets, nine residential dining halls, a line of Blue to Go foods, and the Michigan Catering unit. Our 300 professional and 2000 student employees are committed to creative, healthy, and nutritious foods, international cuisines, and sustainability throughout all dining operations.
The Director of Retail Operations ensures the success of Michigan Retail and maintaining the highest level satisfaction for guests, students, faculty, staff, and other campus community partners. Focused areas of this role include strategic planning, financial accountability, conceptual ideation for programs, compliance with safety and sanitation regulations, operational efficiency, culinary excellence, sustainability and local food sourcing with partners in procurement, and staff development. What You’ll Do
Be a member of Michigan Dining leadership with responsibility for planning and directing the administrative, operational, and developmental activities of multiple operations of retail dining.
Develop and administer the operational procedures, food production standards and methods, and menu guidelines and development for the retail and cash operations.
Advise the Sr. Director in implementation of goals and all programs for Dining Services consistent with comprehensive strategic planning and goals of the University, Student Life and Dining Services.
Assist the team in the development of projects and strategies using best industry practices to enhance current programs for students and clients that increase the perception of value, responsiveness, convenience and accessibility of services including extended hours of service, improved and expanded menu option, and continuing enhancement of the retail and cash operations.
Provide assistance and support in developing plans for operational improvements, renovations, and new construction.

Required Qualifications*
Bachelor’s Degree in Food Service Management, Culinary Arts, Nutrition, Business, or combination of equivalent experience
Up to eight years operational experience in the hospitality industry at the management level
Desired Qualifications*
Up to six years experience in a multi-unit college or university environment with demonstrated progressive growth of managed volume.
Experience with a collective bargained-for workforce.
Experience in construction, renovating and rehabilitation of facilities.

Working Conditions
The Retail Director is classified as a “essential employee” and will be on site during any emergency closure of the University, be available for variable weekday hours, some weekends and holidays.
