HOW YOU WILL IMPACT OUR MISSION The Sous Chef supports San Diego Zoo Wildlife Alliance’s (SDZWA) mission and vision of saving species worldwide by uniting our expertise in animal care and conservation science with our dedication to inspiring passion for nature. The Sous Chef is responsible for assigned kitchen operations and providing primary assistance to the Executive Chef in planning food production, supervising staff. This positions reports to the Chef and Executive Chef.WHAT YOU WILL DO

• Supervises kitchen staff

• Creates and manages employee schedules and Dayforce

• Prepares Chef’s specials and other menu items

• Coordinates with other food production staff

• Assures consistency of food production

• Prepares and posts daily food production lists

• Orders food as per direction of the Executive Chef or in absence of Executive Chef

• Provides assistance in developing and implementing training programs

• Provides assistance to Chef as required

• Demonstrates good work ethics

• Exceeds Organization performance standards

• Adheres to all SDZWA and department policies and practices

• Practices the GRRREAT Customer Service Standards

We are also looking for a team member committed to enhancing the guest experience through exciting menus and high quality culinary offerings.JOB EXPERIENCE

• Advance knowledge of principles and practices within the food profession

• Certification from an accredited culinary program or equivalent specialized training or experience

• Experience in a restaurant or catering kitchen with responsibility for food quality and some menu development

• Experience of high volume operations

• Work a flexible schedule at the direction of the Executive Chef in support of Catering and Restaurants

  EDUCATION AND CERTIFICATIONS

• California driver license

  SKILLS AND KNOWLEDGE

• Various styles of cuisine preparation

• Effective supervisory and training skills of small to large teams

• Strong ability to multitask

• Use word processing and ordering systems

• Order products and monitor budgets

• Understand recipes and menus

• Evaluate food condition, quality, and presentation

• Communicate effectively (verbal and written)

• Prioritize, organize and work effectively with others in a diverse environment
